Whole-grain waffles with açaí sorbet

Ingredients

  • 3 eggs
  • 5 dl cultured milk or kefir
  • 200 g finely ground wheat
  • 100 g wheat flour
  • 2 dl rolled oats
  • 2 tablespoons sugar
  • 1 tsp baking powder
  • 1 tsp cardamom
  • 1 pinch of salt
  • 100 g butter, melted

To serve

  • Açaí sorbet from Vibe Açaí
  • Fresh blueberries
  • Chopped nuts (hazelnuts or almonds)
Tips

Let the batter rest for 20 to 30 minutes before cooking. This will give the waffles a chewier texture and crispier edges. Cultured milk adds a slightly tangy flavor that pairs perfectly with the fresh açaí sorbet. Take the sorbet out of the freezer a couple of minutes before serving so it’s easy to scoop.

Procedure

  1. Whisk together the eggs and buttermilk in a large bowl.
  2. Mix the dry ingredients in a separate bowl, then stir them into the egg mixture until smooth.
  3. Finally, stir in the melted butter. Let the dough rise on the counter for 20 to 30 minutes.
  4. Cook the waffles in a well-heated waffle iron until they are golden brown and crispy.
  5. Let the waffles cool for a minute or two on a wire rack; that way, they'll stay crispy.
  6. Top the warm waffle with scoops of açaí sorbet, fresh blueberries, and chopped nuts. Serve immediately.
